1. Remove the giblets and rinse the chicken thoroughly. Then, pat the chicken dry by using paper towels. Then, combine salt, pepper and minced herbs such as basil, rosemary, sage, thyme, or cilantro. Season the inner and outer portion of chicken with the prepared herbs and spices.

2. Prepare the charcoal grill by arranging a bed of hot coals. Rake the coals to one portion of the grill. You will have to grill the chicken beside the coals, and not over them.

3. Turn only one of the grill burners and place it on high heat setting. Make sure that you leave the other half of the grill unit to prevent burning of the chicken.

  • 2 1/2 lbs chicken parts, washed and cleaned

For Sauce:

  • 1/4 cup tomato paste
  • 1/4 cup vegetable oil
  • 1/2 cup white wine vinegar
  • 1/4 cup orange juice, concentrate
  • 1 orange zest

For Salad:

  • 2 tomatoes, cut into wedges
  • 2 oranges (without rind), cut
  • 2 scallions, chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon white wine vinegar


  1. Clean the grill of any dirt or dust and heat the coals.
  2. In a bowl, combine all the tomato paste, vegetable oil, vinegar, orange juice and zest and mix them until the mixture is smooth to form the sauce for grilling the chicken.
  3. Place the chicken parts on the grill and make sure that they are skin-side-down and away from the center heat. Let them cook for about 15 minutes.
  4. Turn the chicken parts over and grill them for another 10 minutes.
  5. Brush the chicken parts with the sauce you have created earlier and grill them for another 10 minutes, turning them occasionally so that they are cook evenly.
